ASPARAGUS
WITH PECAN SAUCE
1 1/2 pounds fresh asparagus
1/4 cup pecans, chopped
6 tablespoons butter
1 teaspoon tarragon white wine vinegar
Cook asparagus in the usual way and season with salt and
freshly ground black pepper (I cook it in the microwave
for about 4 minutes).
In a small saucepan, melt butter and cook pecans,
stirring, until they start to darken in color. Pour in
white wine vinegar and mixture will froth quickly. Spoon
mixture over asparagus and serve immediately.
