BANANAS FOSTER
What a terrific way to elevate the humble banana to an eye-popping dessert. This recipe is a classic tropical dessert that restaurants often prepare tableside.

3/4 cup (4 1/2 ounces) sugar
juice of 1 lemon (1 tablespoon)
1/4 cup (2 ounces or 1/2 stick) butter
1/4 cup (2 ounces) rum
1/4 cup (2 ounces) water
5 whole ripe bananas, halved

Place the sugar in a skillet with the lemon juice and heat until it turns into a brown caramel (about 5 minutes). Add the butter slowly and stir. Then add the rum and water. Stir together and bring to a boil. When the mixture boils, add the banana halves.

Reduce to medium heat and cook for 1 minute. Immediately spoon onto the serving platter. Serve hot with vanilla ice cream.
