ROAST BEEF & CREAMY HORSERADISH WRAPS
A quick, tasty and refreshing low-fat sandwich for hot, summer days.

2 tablespoons prepared horseradish
1/2 cup light mayonnaise
1/2 cup light sour cream
4 low-fat burrito-sized flour tortillas
1 pound deli roast beef
6 leaves lettuce, core removed
2 beefsteak tomatoes, thinly sliced

Combine the horseradish, mayonnaise and sour cream in a bowl.

Working with 1 wrap at a time, lay a tortilla on your work surface. Spread it with about 1/4 cup of the horseradish mixture, leaving a 1-inch border all around. Top with 1/4 pound of the roast beef and a layer of lettuce. Cover half the surface with 1/4 of the tomato slices. Roll the sandwich as tightly as possible and wrap with plastic wrap or foil. Refrigerate 10 minutes, cut each sandwich in half, and serve. Yield: 4 servings
