BEEROCKS
--A very old
recipe from Germany
The dough:
3/4 cup warm water
1 package of active dry yeast
1/3 cup sugar
3/4 teaspoon salt
1 cup mashed potatoes (instant will work here)
1 egg
1/3 cup salad oil
3-1/4 cups unsifted all-purpose flour
Hamburger Mixture:
1-1/2 lbs lean ground beef
1 cup shredded cabbage
1 envelope onion soup mix
3/4 cup drained sauerkraut
3/4 teaspoon salt (season to taste)
1/2 teaspoon pepper
3/4 cup water
Egg Mixture:
1 egg beaten
1 tablespoon water
For the hamburger mixture:
In a large skillet, brown meat; drain off all the fat.
Add remaining ingredients. Cook, uncovered for 20 minutes
until the liquid is absorbed; stir occasionally as
needed.
For the dough:
In a large mixing bowl, combine water, yeast, sugar and
salt; let stand 5 minutes until bubbly. Add mashed
potatoes, 1 egg and oil and beat at medium speed until
well mixed. Then add 1-1/2 cups flour and beat at medium
speed for 2 minutes, scraping the sides of the bowl
occasionally. With a wooden spoon, stir in enough flour
(about 1-1/2 cups) until a stiff dough forms. Spoon the
mixture onto a lightly floured surface and knead until
smooth, about 5 minutes.
Divide the dough in half. Roll out one half into an
18-inch circle; cut this into 4 pieces (about 6-7 inch)
circles. Spoon about 3/4 cup of the hamburger mixture in
the center of each circle. Brush the edges with a little
egg wash, if needed, then fold over the circles until
they form a half-circle shape. With the tines of a fork,
gently press the dough edges together to seal them. Use a
table knife to dress up the sealed edges so that they
resemble a half moon. Place on a greased cookie sheet.
Repeat with the remaining dough and filling. Cover and
let rise for about 20 minutes.
Pre-heat the oven to 375 degrees F. In a small bowl
combine egg and water. Brush the tops of the turn overs
with the egg mixture. Bake for 15 to 20 minutes or until
golden brown. Serve hot or refrigerate to serve cold.
Makes about 8 turnovers. These are fantastic for outdoor
activities such as hiking or just snacking.
