CAJUN PASTRY
1 cup rice
1/2 cup chopped onion
2/3 cup chopped red bell peppers
2 cloves garlic, minced
1 cup chopped celery
1/4 cup chopped parsley
1 jar (2 oz.) Pimientos, drained
1/4 cup margarine
1-1/2 teaspoon seasoned salt
1/2 teaspoon red pepper
1 can (10-3/4 oz.) cream of mushroom soup
1 cup cooked crabmeat
1 cup cooked shrimp
8 small pie shells
Cook rice according to package directions. Preheat oven
to 400 degrees F.
In a medium skillet, sauté next 7 ingredients. Add
seasonings and mix until blended. Add soup and stir well.
Add crabmeat, shrimp and cooked rice. Stir to combine.
Place 1/3 to 1/2 cup of mixture into each pie shell. Bake
at 400 degrees F. for 20 minutes. Serves 8
