CHEESE RAVIOLI WITH SUMMER SQUASH

1 9oz pkg fresh cheese ravioli (I have used frozen when fresh unavailable)
2 Tbs olive oil
1-1/2 c julienne cut Zucchini
1-1/2 c julienne yellow Crook neck squash
1 med red bell pepper coarsely chopped
1/2 c sliced green onions (optional)
1-1/2 c fresh sliced mushrooms (optional)
1 clove fresh minced garlic
1/2 tsp basil (fresh or dried)
1/4 tsp salt 1/8 tsp pepper
1 c shredded mozzarella

Cook ravioli, drain & rinse w/hot water & set aside. Heat oil in fry pan until hot..add garlic & saute lightly.. add zucchini, yellow squash, bell pepper, mushrooms and cook 5 min. or until tender crisp.. add basil, salt, pepper, ravioli and cook additional 5 min.. sprinkle cheese on top & cover to melt.
