| CHICKEN SPINACH AND RICE
ROLL-UPS 4 boneless chicken breasts, pounded
flat (as flat as possible)
1 cup long grain rice, cooked and cooled
1 package frozen spinach, thawed.
Mix rice and spinach together in bowl. Set aside.
Lay the chicken on a piece of foil. Place thin layer of
the rice and spinach mixture onto the chicken and roll
up. Use the foil to loosely wrap the chicken rolls and
place onto baking sheet. This will make 4 individual
servings. Cook in 350 degree oven for approx. 30 min.
Great flavor and extremely low in fat and carbs!
