| CHICKEN WITH A CRUST 1/4
cup seasoned bread crumbs
1 tbsp chopped parsley
garlic to taste
olive oil (approx 1 tbsp)
2 tbsp dijon mustard
2 chicken breast halves with bones and skin
Preheat oven to 400. In small bowl, mix bread crumbs,
parsley and garlic. Moisten with olive oil until crumbs
begin to hold together. Brush mustard on skin side of
chicken, coat with bread crumbs pressing into chicken.
Spray 13x9 pan with pan spray. Place chicken skin side up
in pan. Bake 40 - 45 minutes.
