CHOCOLATE CREAM PIE

1 cup sugar
1/3 cup cornstarch
1/4 cup unsweetened baking cocoa
1/4 tsp salt
3 cups milk (whole milk is best)
3 egg yolks, slightly beaten
2 tbs butter
2 tsp vanilla
1 refrigerated pie crust

Place pie crust in a deep 9 inch pie plate, prick all over with a fork and bake at 450 oven for 10 minutes, let cool. Mean while place sugar, cornstarch,salt milk and cocoa in a large pan and whisk smooth, turn heat to med high and cook until it thickens and boils, Stirring constantly boil 2 minutes, remove from heat, blend a small amount of hot mixture into the egg yolks, add yolk mix back into the pan, mixing well, stirring constantly, cook until it just begins to bubble again, remove from heat stir in butter and vanilla until butter melts. Pour into pie shell. at this point you can use the egg whites to make a meringue but my family doesn't like it so I just put plastic wrap directly on the pie so it wont form a skin while chilling. chill at least over night and garnish with real whipped cream.
