CRANBERRY CHICKEN

6 bone in chicken breasts w/ or w/o skin (or boneless if you prefer)
1 bottle of Catalina dressing
1 16 oz. can of whole cranberries
1 clove (or more) of garlic, chopped fine
1/2 teaspoon fresh ground pepper
fresh parsley

Preheat oven to 350 degrees Combine the entire bottle of Catalina dressing w/ the entire can of cranberries, add the garlic and the pepper, mix well. Arrange chicken breasts in an 8 x 11 or some such size baking dish Pour cranberry mixture over the chicken and cover with tin foil. Bake for 45 min. to 1 hr., depending on whether you used bone in or boneless breasts - bone in take longer - remove tin foil for last 15 minutes of baking. When serving, spoon sauce in dish over chicken and sprinkle with fresh parsley. Serves 4-6

Tip: Serve with baked sweet potatoes, which can be dressed with the sauce of the cooked cranberry chicken dish.
