| CREAM PUFFS 1/2 cup
butter
1 cup water
1 cup sifted flour
1/2 tsp salt
4 eggs
Heat oven to 375 F. Grease baking sheet. Melt butter in
water over med. heat. Turn heat down. Add flour and salt.
Stir vigorously till mixture forms a ball and pulls away
from sides of pan. Remove from heat. Add eggs one at a
time, mixing after each addition till mixture is smooth
and shiny. Drop by tablespoonfuls onto prepared baking
sheets. Bake for 1 hr. When puffs are thoroughly cool,
cut off tops and fill with desired filling such as
pudding, mousse, chicken or tuna salad. Replace top. If
filled with a dessert mixture such as pudding, dust tops
with powdered sugar. Serves: 12
