| FRESH SHRIMP SALAD 1
lb of fresh small shrimp (cooked and chilled)
2 sticks of celery (chopped thin and small)
5-6 scallions (chopped thin and small)
cup mayonnaise (and/or mix with your favorite homemade
dressing)
1 head each of Iceberg, romaine lettuce, spinach (any mix
of the greens will do)
Place each of the ingredients in a separate
bowl/container on your counter or table top. For each
separate serving, place dressing in the bottom of a large
bowl, add shrimp, celery and scallions, mix well; add
lettuce, top with croutons. Serve with homemade bread of
your choice.
