BASIC
FRITTER BATTER
4oz of Whole-wheat or white self raising flour
1/2 level teaspoon of salt
Black Pepper
1 Large Egg
1/4 pint of milk
A little lard for frying.
1. Mix flour, salt and pepper in a bowl, make a well in
the centre and drop in the egg.
2. Gradually stir in half the milk using a wooden spoon.
Mix well and beat until smooth, adding the rest of the
milk. If using whole-wheat flour add 1 extra tablespoon
of milk.
The Fillings.
Bacon: Cut 8 oz of bacon into strips and fry
until crisp.
Cheese: Grate 6 oz of Cheddar cheese
Tuna and Parsley: Flake 7 oz tinned tuna
and mix into it 2 tablespoons of chopped parsley.
Sweet corn: Drain a 7 oz tin of sweet
corn.
Salami: Finely chop 4oz or more
Cold chicken with mushrooms: Chop 2 oz
of mushrooms fry for two minutes in 1/2 oz of butter or
margarine. Mix with 4 oz or more finely chopped cooked
chicken.
The Fritters
Stir the filling of your choice into the batter or divide
the batter and make a variety of fritters. Heat a little
lard in a frying pan. Add tablespoons of mixture and fry
until golden brown on both sides.
