GARLIC CHICKEN
2 Boneless, skinless chicken breast halves
2 medium onions, peeled and sliced
10 (or more!) cloves garlic, peeled and lightly crushed
2 medium potatoes, peeled and chunked
2-3 Tbs Olive oil
2 cups fresh or canned peeled tomatoes, chopped
salt and pepper to taste
Place chicken, onions and garlic in a nonreactive
container. add the oil toss to coat thoroughly. Let
marinate for 1 to 2 hours. Heat a skillet and add the
chicken mixture. Lightly brown the chicken while sauteing
the onions and garlic. Add the tomatoes and potatoes,
salt and pepper, cover and simmer for 15 to 20 minutes,
until the chicken and potatoes are cooked. For a complete
meal, you can add chopped zucchini or water packed canned
artichokes or other vegetable during the last few minutes
of cooking.
