GREEN
BEANS WITH BROWNED BUTTER & BALSAMIC VINEGAR
This
simple treatment makes plain green beans very special.
1 1/2 pounds green beans, trimmed
3 tablespoons butter
1 tablespoon balsamic vinegar
salt & freshly ground pepper
Blanch beans in a large pot of boiling water until
crisp-tender, about 5 minutes.
Meanwhile, combine butter, vinegar, salt and pepper in
heavy medium skillet over medium heat. Cook until mixture
begins to brown, stirring constantly, about 4 minutes.
Set aside.
Drain beans well and transfer to serving dish. Spoon
browned butter mixture over beans and serve immediately.
