HOT & SPICY FRUIT SALSA FOR GRILLED CHICKEN OR FISH

1 cup fresh peaches, mangos or papaya, diced
1/2 cup red onion, diced
1/4 cup fresh lime, lemon or orange juice (or a combination)
1 Tbs. cider vinegar
1 tsp. orange extract or orange liqueur (optional)
1 Tbs. honey
1 Tbs. zest from citrus fruit
1 Tbs. chile powder, preferably ancho chile powder
2 Tbs. finely diced fresh jalapeno pepper
1/2 cup diced fresh tomato
1 Tbs. fresh cilantro, chiffonade

Mix all ingredients. Let stand at least 30 minutes to macerate. Serve with grilled chicken or fish. Serves 4-6. You can substitute berries, onions, shallots, roasted garlic, bell peppers, hotter peppers, molasses, or a combination of citrus fruits. Keeps covered in the refrigerator for about two days. This is a guiltless way to add flavor and color to your dish.
