ITALIAN
SAUSAGE AND PEPPER SUBS
Serves 2
generously.......just add a green salad if you wish.
1 green bell pepper
1 red bell pepper
1 T. flavorful olive oil
1 large onion, sliced
3-4 garlic cloves
1 lb. Italian sausage, sliced (we use low fat turkey
sausage, no sat. fat, and we can't tell the difference)
1 t. Italian seasoning
Salt and Pepper to taste
optional: cayenne pepper (depending on the spiciness of
the sausage, and your taste)
2-3 submarine rolls (hero rolls, hoagie rolls, Italian
rolls- about 10-12 inches long, or a loaf of Italian or
French bread cut into lengths suitable for sandwiches)
Roast the peppers over an open fire until blackened all
over, put in a paper bag for 5-10 minutes, scrape off
skin, and remove seeds and ribs. Slice into strips. Set
aside.
In a large skillet, heat the oil, add the onion and
garlic, and saute until the onions are translucent.
Remove from the pan, add the sausage and let brown for a
few minutes. Add the seasonings, the onions, the peppers
and stir until hot.
Slice the bread horizontally, and fill with the sausage
and veggie mixture.
